Loaded with flavor! Red Lentils & Rice….

I made this dish on a whim last night.  My entire family gave it a huge thumbs up!  It’s loaded with flavor and was not labor intensive at all.  As usual, I used what I had on hand.  Depending on your taste buds, you could turn this into a Spanish or Indian dish.  I prefer Spanish / Mexican flavors so I seasoned with a fair amount of cumin.  I love spice, but if I’m making something that the kids are going to eat, I refrain from adding any kind of heat like jalapeno, cayenne, chilis etc…  For this batch, I only added ground black pepper for a little spice.  Plus, fresh garlic and fresh grated ginger will give any dish a kick.  I am not a big fan of curry, so I haven’t explored a lot of Indian dishes.  I need to take the time to visit an Indian market to really educate myself on the various types of curry.  I’ve only been exposed to standard curries that are offered at Indian restaurants, which I haven’t been a huge fan of.  So, if you love curry / Indian spices, replace the cumin with it.   Continue reading “Loaded with flavor! Easy Healthy Breakfast….

Are your mornings as crazy as mine?  You always hear or read, “Breakfast is the most important meal of the day”, right?  So what are most people stuck eating because they don’t have time to prepare a healthy meal?  SUGAR, SUGAR, SUGAR!  Prepackaged junk, like cereal bars, etc… Drive through options, donuts, microwaved breakfast sandwiches etc….  What happens after you eat that junk?  Stomach ache, crash & burn, no energy and hunger pangs an hour later.  You’re consuming empty useless calories.   Continue reading “Easy Healthy Breakfast….”

Easy! Healthy & Filling

So, what’s for dinner tonight?  A few things I always have on hand:

  • Cooked Brown Rice
  • Salad 
  • Roasted Veggies

Brown rice is great.  Packed with iron.  It’s good right after you cook it warm or as left overs cold.  I buy it in bulk at the Honest Weight Food Co-op in Albany.  I actually buy all of my grains, flours and nut butters there.  If you live in Albany NY area, check it out.  You don’t have to be a member.  The membership is worth it if you exclusively shop there, but otherwise it’s not mandatory.  There are food co-ops everywhere you go.  When I traveled for work and Vermont was part of my sales territory, I knew where every co-op was in the state.  They always have excellent deli’s with delicious vegan options, soups etc…   Continue reading “Easy, Filling and Fast….”

Farmers Market Fun…


Great Saturday morning!  The season has begun!  Yesterday was the opening day of the Farmers Market where I live in the town of Bethlehem.  Farmers Markets are a great community resource.  They provide many introductions in regards to local farmers, craftsman, restaurants, musicians and more….  Regardless of where you live, more than likely you can find a farmers market within a fairly close proximity.  Take advantage of it!  If you attend the Delmar Farmers market on Saturday mornings, you know what a treat and social event it can be.  My son loves it!  He loves going early in the morning with me, trying all of the samples!  One of his favorites is “Puckers Pickles”.  We always leave with a huge jar of the horseradish pickles.  They are Delicious!  Puckers also makes a great Kimchi and Pak Dong.  I make my own which I will discuss in a future post, but if you have no interest in making your own, buying it from a place like Puckers is well worth it!  The health benefits of Kimchi are phenomenal (packed with probiotics).  New to the Delmar Farmers market this year is brilliant artist, Pam Collins.  Pam is a close friend, so I’m fortunate to own a few of her pottery pieces.  Her work is unique and absolutely beautiful.   Continue reading “Farmers Market Fun…”

Delete the word “Diet”….

Delete the word diet

The word “diet” should not be part of our vocabulary.  Portion control and choosing the right types of food to me are what’s important.  Easier said than done, right?  Become familiar with what food actually tastes like.  I find that American cuisine is too often masked with melted cheese, tons of salt, and of course sugar! Pay attention to your kids taste buds.  For example, when kids are small, they haven’t been introduced to extra flavor (salt, sugar, gravy, etc…). They eat food in its natural form.  My kids love steamed broccoli, salad without dressing, raw veggies & every kind of fruit.  Everyone’s going to be exposed to the junk on occasion.  But, we can control what’s available at home. 

In terms of portion control, not so much measuring specific amounts, but slowing down, chewing, enjoying the taste and stopping when you feel full.  I’ve been guilty of not doing any of that!  When my husband and I first started dating, I remember hanging out at my apartment eating pizza.  He commented that, “he’d never witness anyone eat a slice of pizza so fast”.  I still have to concentrate on slowing down when I’m eating.  It’s tough not always being in a rush.  Especially during a meal. Breakfast, get out the door school, work, etc… Lunch, working lunch (stinks but reality for too many of us) and Dinner, hurry up we’ve got to get to practice / game! Unfortunately one of the biggest mistakes we all make is grabbing the prepackaged,unhealthy, fast food option for all of our meals.  I will be sharing some tips and recipe’s that have worked for me and my family soon.  Stay tuned…  

Lastly, about that nasty word “diet”.  Get it out of your mind!  Like everything, eating clean is a choice.  But it’s a choice you can make without making your life miserable!  A “diet” never lasts.  Another thing, eating clean will not break the bank.  You’ll be surprised how much $ you’ll actually save when you cut back or eliminate the junk and replace it with fresh / natural items.

Muffins passed the taste test!

After a lot of configuration, I think I nailed this batch of muffins!  Every time I make them, I seem to take a slightly different approach.  So the goal is to make them as healthy as possible, but of course, still taste great!  My tasters (husband, Mother in law) gave them a big thumbs up!  Very happy about that.  My Thursday morning running partner (Rachael) will try them tomorrow! Fingers crossed she loves them. 

As mentioned yesterday, the muffins are Vegan & Gluten free.  I also use no white sugar.  This batch was sweetened with bananas, granny smith apple, carrots, molasses and raisins.  I used brown rice flour and I make a flax seed egg.  Anyhow, I will post the actual recipe and variations further down the line.  I find these to be great after an intense work out, like a long run or bike ride.  I put fresh ground nut butter on top for extra protein to help my muscles recover.
