So, what’s for dinner tonight? A few things I always have on hand:
- Cooked Brown Rice
- Roasted Veggies
Brown rice is great. Packed with iron. It’s good right after you cook it warm or as left overs cold. I buy it in bulk at the Honest Weight Food Co-op in Albany. I actually buy all of my grains, flours and nut butters there. If you live in Albany NY area, check it out. You don’t have to be a member. The membership is worth it if you exclusively shop there, but otherwise it’s not mandatory. There are food co-ops everywhere you go. When I traveled for work and Vermont was part of my sales territory, I knew where every co-op was in the state. They always have excellent deli’s with delicious vegan options, soups etc…
Salad can be anything you like. I usually have romaine lettuce chopped and ready to go at all times, along with a container of baby spinach. A lot of times I shred a carrot and place sliced onion on top of the romaine so it’s ready to go. Roasted Veggies I cook 2-3 times per week. I load whatever I have in the fridge on a cookie sheet, drizzle with olive oil and bake on 400 until they’re done. I like having leftovers in the fridge. I’ll eat them cold with humus or salad and rice. I like having all of these items on hand because not only are they healthy, filling and delicious, but easy! Life is busy! You can grab and go. Throw it all in a container and bring dressing of your choice, balsamic vinegar etc… And you’re all set for lunch at your office or on the road. These items can be used for fast variations on dinner so you’re not serving the same thing. My family are not fans of eating the same thing all the time. For example, add chicken (meat of choice or tofu), sesame seeds, soy sauce etc…. you’ll have a great stir fry. Having chopped lettuce, prepared rice on hand, grill meat & heat up beans. Grab tortillas, wraps and you have easy burritos or tacos.
The options are endless. It is possible to have “fast food” at home, that’s healthy, fresh and you know what you’re eating. It’s not packed with sodium, sugar, preservatives, all the processed stuff!
